As a part of the Georgian Bay Hotel, on 10 Vacation Inn Drive in Collingwood, Ontario, there is a nice steakhouse, seafood place and bar by the name of the Gustav Chophouse & Bar. This place has a very interesting history and tradition, and today it is one of the fanciest places in Collingwood where people can enjoy meals in a classy atmosphere.
The place takes reservations, and there is a dressy attire code, which is not as strict as one may think. There is a big parking lot at the Georgian Bay Hotel for all kinds of vehicles. A restaurant is a nice place where one can go on a romantic dinner or can take their family for a celebration, or simply enjoy a good meal and drinks with friends. There are TV’s and free Wi-Fi and the restaurant is wheelchair accessible.
This restaurant serves steaks and seafood, with plenty of vegetarian and gluten-free options. It serves breakfast, brunch, lunch, dinner, and drinks, starting work at 11 AM on weekdays and at 8 AM on weekends. The closing time is 11 PM from Monday to Wednesday, midnight from Thursday to Saturday and 10 PM on Sunday.

Gustav Chophouse and Bar has been a part of the Georgian Bay Hotel for a while, and it got an update in 2016. The restaurant has a pleasant rustic theme, with some rough-sewn wood accents, large Edison lights, and soft cream-coloured walls. There are wooden tables and faux leather upholstered chairs in the dining area, and leather sofas and armchairs in the waiting and bar area. The bar is large, wooden and has interesting bar stools in front, and the back of the bar displays all the liquor bottles and two large TV sets.
The menu is extensive, with separate breakfast, lunch, dinner, kids menu, cocktails menu, large wine list, group menu and the current promotion (June is Lobsterfest). The breakfast menu offers classic eggs dishes, flapjacks, omelettes, steak and eggs, and even French toast. The kid's menu has all the things kids enjoy and includes pop and dessert among the wings dish, kid’s burger, chicken fingers, and kid’s steak dinner.
The lunch menu has items like soups, appetizers, wings, calamari, seafood croquettes, escargot, and charcuterie boards among others. There are salads, lounge entrees like sandwiches, fish & chips and more, flatbread pizza and more. The dinner menu is what this restaurant is famous for, and it consists of soups, starters, salads, steak and seafood dishes, chicken, ribs and pasta dishes, and chophouse commons.
This restaurant offers a lot of cocktails, beers, martini drinks, and a nice wine list that complements the food excellently. From what I’ve read, this place is usually favoured by vacationers in Collingwood and people celebrating birthdays and anniversaries.
